{"id":852,"date":"2019-10-11T10:00:32","date_gmt":"2019-10-11T08:00:32","guid":{"rendered":"http:\/\/www.victa.it\/?p=852"},"modified":"2019-06-27T16:53:09","modified_gmt":"2019-06-27T14:53:09","slug":"cosucra-launches-the-new-injectable-pea-fiber","status":"publish","type":"post","link":"https:\/\/www.victa.it\/en\/cosucra-launches-the-new-injectable-pea-fiber\/","title":{"rendered":"Cosucra launches the new injectable pea fiber"},"content":{"rendered":"<p>We are glad to inform that our partner <strong>Cosucra<\/strong> has enlarged its range of pea fibers by launching a new (highly awaited!) version of its functional fiber Swelite.<br \/>\nThe new product, named \u201c<strong>Swelite F<\/strong>\u201d, has the peculiarity to be injectable: this feature makes it a valid technical solution for meat applications.<br \/>\nAdded to the brine, it does not leave visible streaks in the finished product, like the other fibers do.<\/p>\n<p>Swelite F is also suitable to stabilize and improve the aspect and the texture of \u201cimitation fresh cheese\u201d and fillings for pasta and savoury baked products.<\/p>\n<p>Compared to the standard version, that has been renamed \u201cSwelite C\u201d, Swelite F has the following features:<\/p>\n<p>\u2022 it has a finer granulometry (60% &gt;100 micron, 90% &gt;200 micron) which leads it to be injectable and become creamy on the palate<br \/>\n\u2022 it has a water holding capacity of 7 times its weight (Swelite C has a WHC of 10x or more)<br \/>\n\u2022 on the finished product, it is recommended at a maximum dosage of 3%-4% (Swelite C has a typical dosage of 1% up to 2%)<br \/>\n\u2022 it can be declared as simply as \u201cvegetal fiber\u201d<\/p>\n<p>Likewise the standard version, Swelite F has a very clear color, it is neutral in taste and it has a shelf life of 3 years.<\/p>\n<p>Moreover:<br \/>\n\u2022 it is easily water dispersible<br \/>\n\u2022 it contributes to the yield in the production and reduces losses during the cooking process<br \/>\n\u2022 it is easy to use into blends (since it is not dusty)<br \/>\n\u2022 it stabilizes the finished product form<br \/>\n\u2022 it has a reduced volume compared for example, to wheat fibers.<br \/>\n\u2022 it improves the texture of the vegan\/vegetarian products by compacting their proteins<br \/>\n\u2022 it helps keeping a good level of moisture and smoothness, leading to a more natural and fresher aspect of the products<\/p>\n<p>For further info, do not hesitate to contact us!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>We are glad to inform that our partner Cosucra has enlarged its range of pea fibers by launching a new (highly awaited!) version of its functional fiber Swelite.
